Natural process:
The entire coffee cherry (including the pulp and skin) is dried whole in the sun, without removing any of the fruit, essentially drying the cherry like a raisin, which results in a coffee with a distinct, often fruity flavor profile; it's also known as the "dry process" or "sun-dried" method.
